- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup Arborio rice
- 1/2 cup dry white wine
- 4 cups seafood stock (or chicken stock)
- 1 cup shrimp, peeled and deveined
- 1 cup scallops, cleaned
- 1 cup mussels, cleaned and debearded
- 1/2 cup frozen peas
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the Arborio rice to the pan and stir to coat the grains with oil, cooking for about 2 minutes until slightly toasted.
- Pour in the white wine and cook, stirring constantly, until the liquid is mostly absorbed.
- Begin adding the seafood stock, one ladleful at a time, stirring frequently. Allow each addition to be absorbed before adding the next, which should take about 20 minutes.
- When the rice is creamy and al dente, stir in the shrimp, scallops, and mussels. Cook for an additional 5-7 minutes until the seafood is cooked through and the mussels have opened.
- Stir in the frozen peas, Parmesan cheese, and season with salt and pepper to taste. Remove from heat and let it sit for a couple of minutes.
- Serve hot, garnished with fresh parsley and lemon wedges on the side.
Notes
- For a creamier risotto, you can add an extra tablespoon of butter along with the Parmesan cheese.
- Feel free to swap out the seafood for your favorites, such as crab or lobster, or use a mix of vegetables for a vegetarian version.
