Description
A traditional Scottish dish, Scotch Pie is a savory meat pie filled with ground lamb or beef, seasoned to perfection and encased in a flaky crust.

- 1 pound ground lamb or beef
- 1 small onion, finely chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 cup beef or lamb broth
- 1 tablespoon Worcestershire sauce
- 1 package (14 ounces) refrigerated pie crusts (2 crusts)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, sauté the chopped onion until soft and translucent, about 5 minutes.
- Add the ground lamb or beef to the skillet and cook until browned, breaking it apart with a spoon, about 7-10 minutes.
- Stir in the thyme, rosemary, salt, pepper, paprika, broth, and Worcestershire sauce. Cook for an additional 2-3 minutes until well combined. Remove from heat and let cool slightly.
- Roll out one pie crust and fit it into a 9-inch pie pan. Trim the edges as needed.
- Spoon the meat mixture into the pie crust, spreading it evenly.
- Roll out the second pie crust and place it over the filling. Trim the excess crust and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
- Brush the top crust with the beaten egg for a golden finish.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
- Allow the pie to cool for 10 minutes before slicing and serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper or some chopped jalapeños to the meat mixture.
- Substitute the ground meat with a mixture of ground turkey and pork for a lighter version.
