Description

A delicious recipe for scallops served with a rich brown butter-sage foam.


Ingredients

Scale
  • 1 pound large sea scallops
  • 4 tablespoons unsalted butter
  • 10 fresh sage leaves
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 lemon, juiced
  • 1/4 cup heavy cream

Instructions

  1. Heat a large skillet over medium-high heat and add the olive oil.
  2. Pat the scallops dry with paper towels and season both sides with salt and pepper.
  3. Once the oil is hot, carefully place the scallops in the skillet, making sure not to overcrowd the pan.
  4. Sear the scallops for about 2-3 minutes on each side until they are golden brown and cooked through.
  5. Remove the scallops from the skillet and set them aside on a plate.
  6. In the same skillet, reduce the heat to medium and add the butter.
  7. Once the butter starts to melt, add the sage leaves.
  8. Cook the butter until it turns a golden brown color and has a nutty aroma, about 3-4 minutes.
  9. Be careful not to burn the butter.
  10. Remove the skillet from the heat and carefully stir in the lemon juice and heavy cream.
  11. Whisk the mixture until it becomes frothy and well combined.
  12. To serve, place the scallops on a plate and drizzle the brown butter-sage foam over the top.
  13. Garnish with additional sage leaves if desired.

Notes

  • For a richer flavor, try adding a pinch of garlic powder to the butter while it browns.
  • If you prefer a lighter version, substitute half of the heavy cream with vegetable broth for a less creamy sauce.
