Description
A delicious recipe for scallops served with a rich brown butter-sage foam.

- 1 pound large sea scallops
- 4 tablespoons unsalted butter
- 10 fresh sage leaves
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 lemon, juiced
- 1/4 cup heavy cream
Instructions
- Heat a large skillet over medium-high heat and add the olive oil.
- Pat the scallops dry with paper towels and season both sides with salt and pepper.
- Once the oil is hot, carefully place the scallops in the skillet, making sure not to overcrowd the pan.
- Sear the scallops for about 2-3 minutes on each side until they are golden brown and cooked through.
- Remove the scallops from the skillet and set them aside on a plate.
- In the same skillet, reduce the heat to medium and add the butter.
- Once the butter starts to melt, add the sage leaves.
- Cook the butter until it turns a golden brown color and has a nutty aroma, about 3-4 minutes.
- Be careful not to burn the butter.
- Remove the skillet from the heat and carefully stir in the lemon juice and heavy cream.
- Whisk the mixture until it becomes frothy and well combined.
- To serve, place the scallops on a plate and drizzle the brown butter-sage foam over the top.
- Garnish with additional sage leaves if desired.
Notes
- For a richer flavor, try adding a pinch of garlic powder to the butter while it browns.
- If you prefer a lighter version, substitute half of the heavy cream with vegetable broth for a less creamy sauce.
