Scallop Brown Butter Bacon Cauliflower Smash is a delicious and irresistible dish featuring tender cauliflower, crispy bacon, and perfectly seared scallops.

- 2 cups cauliflower florets
- 4 slices bacon, chopped
- 4 tablespoons unsalted butter
- 1 pound sea scallops, patted dry
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (for garnish)
- 1 tablespoon lemon juice
Instructions
- In a large pot, bring salted water to a boil. Add the cauliflower florets and cook until tender, about 10-12 minutes. Drain and set aside.
- In a skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate to drain.
- In the same skillet, reduce the heat to low and add the butter. Cook, stirring frequently, until the butter turns golden brown and has a nutty aroma, about 5 minutes. Be careful not to burn it.
- Add the cooked cauliflower to the skillet with the brown butter. Use a potato masher or fork to smash the cauliflower to your desired consistency.
- Stir in the crispy bacon, garlic powder, salt, and pepper.
- In another skillet, heat a little oil over medium-high heat. Season the scallops with salt and pepper.
- Add the scallops to the skillet and sear for about 2-3 minutes on each side until they are golden brown and cooked through.
- To serve, spoon the cauliflower smash onto plates, top with seared scallops, and drizzle with lemon juice. Garnish with fresh parsley.
Notes
- For extra flavor, try adding a pinch of red pepper flakes to the cauliflower smash for a bit of heat.
- You can substitute the scallops with shrimp or grilled chicken for a different protein option.
