Description
A quick and delicious stir-fry featuring savory ground beef and Brussels sprouts, perfect for a weeknight meal.
Ingredients
Scale
- 1 pound ground beef (80/20 for optimal flavor)
- 1 pound Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons soy sauce (or coconut aminos for a soy-free option)
- 1 tablespoon sesame oil
- 1 teaspoon red pepper flakes (optional for heat)
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- While the beef cooks, prepare the Brussels sprouts. In a separate bowl, toss them with salt, pepper, and red pepper flakes if using.
- Once the beef is browned, push it to one side of the skillet. Add the Brussels sprouts to the other side and cook for about 5 minutes, stirring occasionally, until they begin to soften.
- Add the minced garlic and ginger to the skillet, stirring everything together. Cook for an additional 2 minutes until fragrant.
- Pour in the soy sauce and sesame oil, mixing well to combine all ingredients. Cook for another 2-3 minutes, allowing the flavors to meld.
- Remove from heat and garnish with sliced green onions and sesame seeds before serving.
Notes
- For added crunch, consider tossing in some chopped bell peppers or sliced almonds during the last few minutes of cooking.
- Substitute ground beef with ground turkey or chicken for a leaner option while keeping it keto-friendly.
