Description

A quick and delicious stir-fry featuring savory ground beef and Brussels sprouts, perfect for a weeknight meal.

Ingredients

Scale
  • 1 pound ground beef (80/20 for optimal flavor)
  • 1 pound Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 tablespoons soy sauce (or coconut aminos for a soy-free option)
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes (optional for heat)
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. While the beef cooks, prepare the Brussels sprouts. In a separate bowl, toss them with salt, pepper, and red pepper flakes if using.
  3. Once the beef is browned, push it to one side of the skillet. Add the Brussels sprouts to the other side and cook for about 5 minutes, stirring occasionally, until they begin to soften.
  4. Add the minced garlic and ginger to the skillet, stirring everything together. Cook for an additional 2 minutes until fragrant.
  5. Pour in the soy sauce and sesame oil, mixing well to combine all ingredients. Cook for another 2-3 minutes, allowing the flavors to meld.
  6. Remove from heat and garnish with sliced green onions and sesame seeds before serving.

Notes

  • For added crunch, consider tossing in some chopped bell peppers or sliced almonds during the last few minutes of cooking.
  • Substitute ground beef with ground turkey or chicken for a leaner option while keeping it keto-friendly.
