Crispy Vegetable Samosas are a delicious snack filled with spiced potatoes and peas, perfect for any occasion.

- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
- 1/4 cup water (more if needed)
- 2 tablespoons vegetable oil (for filling)
- 1 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 cup potatoes, boiled and mashed
- 1/2 cup green peas, cooked
- 1/4 cup onion, finely chopped
- 1–2 green chilies, finely chopped (optional)
- Salt to taste
- Oil for frying
Instructions
- In a mixing bowl, combine the flour and salt. Add 1/4 cup of vegetable oil and mix until crumbly.
- Gradually add water, kneading until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.
- In a skillet, heat 2 tablespoons of oil over medium heat. Add cumin and mustard seeds, cooking until they start to pop.
- Add onions and green chilies, sautéing until onions are translucent.
- Stir in turmeric, garam masala, and salt. Add the mashed potatoes and peas, mixing well. Cook for another 2-3 minutes, then remove from heat and let cool.
- Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten it into a circle about 6 inches in diameter.
- Cut each circle in half to form two semi-circles. Take one semi-circle, fold it into a cone shape, and seal the edge with a little water.
- Fill the cone with the vegetable mixture and seal the top by pinching the edges together. Repeat with the remaining dough and filling.
- Heat oil in a deep frying pan over medium heat. Fry the samosas in batches until golden brown and crispy, about 4-5 minutes per side.
- Drain on paper towels and serve hot with chutney or sauce of your choice.
Notes
- For a healthier option, you can bake the samosas at 400°F for 25-30 minutes, brushing them lightly with oil before baking.
- You can experiment with different fillings such as lentils, cheese, or mixed vegetables to suit your taste.
