Crispy Vegetable Samosas are a delicious snack filled with spiced potatoes and peas, perfect for any occasion.

- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
- 1/2 cup water (more if needed)
- 2 tablespoons vegetable oil (for filling)
- 1 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1 medium onion, finely chopped
- 1 cup potatoes, boiled and mashed
- 1/2 cup peas (fresh or frozen)
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- Salt to taste
- Oil for frying
Instructions
- In a mixing bowl, combine the flour and salt. Add 1/4 cup of vegetable oil and mix until crumbly. Gradually add water, kneading until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.
- In a skillet, heat 2 tablespoons of oil over medium heat. Add cumin and mustard seeds, cooking until they start to pop. Add chopped onion and sauté until golden brown.
- Stir in the mashed potatoes, peas, garam masala, turmeric, coriander powder, and salt. Cook for another 5 minutes, mixing well. Remove from heat and let the filling cool.
- Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten it into a circle about 6 inches in diameter. Cut the circle in half to form two semi-circles.
- Take one semi-circle and form a cone by folding it along the straight edge, sealing the edge with a little water. Fill the cone with the vegetable mixture and seal the open edge by pinching it together.
- Heat oil in a deep frying pan over medium heat. Fry the samosas in batches until golden brown and crispy, about 4-5 minutes per side. Drain on paper towels.
- Serve hot with chutney or sauce of your choice.
Notes
- For a spicier filling, add chopped green chilies to the vegetable mixture.
- Try using different vegetables like carrots or corn for a unique flavor.
