Ingredients

  • 1 ½ cups almond flour
  • ½ cup unsweetened cocoa powder
  • ¼ cup granulated erythritol (or preferred keto sweetener)
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • ½ cup granulated erythritol (or preferred keto sweetener)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate (85% cocoa or higher), melted
  • 1 teaspoon sea salt (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan with cooking spray or butter.
  2. In a medium bowl, combine almond flour, cocoa powder, erythritol, and salt. Pour in the melted butter and mix until crumbly. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese and erythritol until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and melted dark chocolate until fully combined.
  4. Pour the cheesecake batter over the cooled crust in the springform pan. Smooth the top with a spatula.
  5. Bake in the preheated oven for 30-35 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  6. After an hour, remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  7. Before serving, sprinkle the top with sea salt. Carefully remove the sides of the springform pan and slice the cheesecake into pieces.

Notes

  • For a richer flavor, add 1 teaspoon of instant coffee granules to the cheesecake batter.
  • Top with whipped cream made from heavy cream and a low-carb sweetener for an extra indulgent dessert.
