Description

Indulge in this classic Austrian chocolate cake, known for its rich flavor and smooth glaze.


Ingredients

  • 8 ounces bittersweet chocolate, chopped
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 5 large eggs, separated
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • ½ cup apricot jam
  • 1 cup heavy cream
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract
  • 4 ounces semisweet chocolate, chopped (for glaze)

Instructions

  1. Preheat the oven to 350°F. Grease and flour a 9-inch round cake pan.
  2. In a double boiler, melt the bittersweet chocolate until smooth. Remove from heat and let cool slightly.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the melted chocolate and vanilla extract, mixing well.
  4. Add the egg yolks one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together the flour and salt. Gradually add the flour mixture to the chocolate mixture, stirring until just combined.
  6. In another bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate batter until fully incorporated.
  7. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Once cooled, slice the cake in half horizontally. Spread apricot jam evenly on the bottom layer, then place the top layer back on.
  10. For the glaze, melt the semisweet chocolate in a double boiler. Once melted, let it cool slightly, then pour it over the top of the cake, allowing it to drip down the sides. Let the glaze set for about 30 minutes.
  11. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Serve slices of the Sachertorte with a dollop of whipped cream.

Notes

  • For a richer flavor, add a tablespoon of coffee liqueur to the chocolate batter.
  • Try using raspberry jam instead of apricot for a different fruit flavor.
