Description

Decadent Chocolate Sacher Torte


Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs, separated
  • 6 ounces bittersweet chocolate, melted and cooled
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup apricot jam
  • 4 ounces bittersweet chocolate, chopped (for ganache)
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F. Grease and flour an 8-inch round cake pan.
  2. In a large mixing bowl, cream together the softened butter, sugar, and vanilla extract until light and fluffy.
  3. Add the egg yolks one at a time, mixing well after each addition.
  4. Stir in the melted chocolate until fully combined.
  5. In a separate bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the batter.
  7. Sift the flour and salt together, then fold into the batter until just combined.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  11. Once cooled, spread the apricot jam evenly over the top of the cake.
  12. For the ganache, heat the heavy cream in a small saucepan until just boiling.
  13. Remove from heat and add the chopped chocolate, stirring until smooth and glossy.
  14. Let the ganache cool slightly before pouring it over the cake, allowing it to drip down the sides.
  15. Let the ganache set for about 30 minutes before slicing.

Notes

  • For a richer flavor, add a teaspoon of espresso powder to the chocolate batter.
  • You can also substitute the apricot jam with raspberry or cherry jam for a different fruit flavor.
