- 2 pounds lamb shoulder, cut into 1-inch cubes
- 1 tablespoon vegetable oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon garam masala
- 1 teaspoon salt
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 cup plain yogurt
- 1 cup beef or lamb broth
- Fresh cilantro, for garnish
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the ground coriander, cumin, turmeric, cayenne pepper, garam masala, and salt. Cook for another minute, stirring constantly to toast the spices.
- Add the lamb cubes to the pot, browning them on all sides for about 5-6 minutes.
- Stir in the drained diced tomatoes and cook for 2-3 minutes.
- Lower the heat and mix in the yogurt until well combined.
- Pour in the broth, bring to a simmer, then cover and reduce the heat to low. Cook for 1.5 to 2 hours, stirring occasionally, until the lamb is tender.
- Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
Notes
- For a spicier version, increase the cayenne pepper or add fresh chopped green chilies.
- Serve with basmati rice or naan for a complete meal, and consider adding a side of yogurt or cucumber salad for balance.
