- 2 pounds lamb shoulder, cut into 2-inch pieces
- 1 cup plain yogurt
- 2 large onions, finely sliced
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons vegetable oil
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon garam masala
- 1 teaspoon salt (or to taste)
- 1 cup water
- Fresh cilantro, for garnish
Instructions
- In a large bowl, combine the yogurt, garlic, ginger, ground coriander, ground cumin, turmeric, paprika, cayenne pepper, and salt. Add the lamb pieces and mix well to coat. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
- Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the sliced onions and cook until they are golden brown, about 10-15 minutes, stirring frequently.
- Add the marinated lamb to the pot, including the marinade. Cook for about 5 minutes, stirring occasionally, until the lamb is browned on all sides.
- Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the lamb is tender. Stir occasionally and add more water if needed to prevent sticking.
- Once the lamb is tender, stir in the garam masala and adjust seasoning with salt if necessary. Cook for an additional 10 minutes uncovered to thicken the sauce.
- Serve hot, garnished with fresh cilantro, alongside steamed basmati rice or naan.
Notes
- For a richer flavor, add a few whole spices like cardamom pods, cloves, and cinnamon sticks during the cooking process. Remove them before serving.
- Substitute lamb with beef or chicken for a different protein option, adjusting the cooking time as needed for tenderness.
