- 2 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon ground cinnamon
- 2 cups beef or lamb broth
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large bowl, combine the lamb cubes and yogurt. Mix well to coat the meat and let it marinate for at least 1 hour, or overnight in the refrigerator for better flavor.
- Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onions and sauté until they are golden brown, about 10-12 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
- Add the marinated lamb (reserve the yogurt marinade) to the pot and brown the meat on all sides, about 5-7 minutes.
- Sprinkle in the ground cumin, coriander, turmeric, paprika, cayenne pepper, and cinnamon. Stir well to coat the meat with the spices.
- Pour in the broth and reserved yogurt marinade, stirring to combine. Bring the mixture to a gentle boil, then reduce the heat to low.
- Cover the pot and let it simmer for 1.5 to 2 hours, or until the lamb is tender. Stir occasionally and add more broth if needed to prevent sticking.
- Season with salt to taste and garnish with chopped cilantro before serving.
