A delicious side dish featuring roasted radishes drizzled with nutty brown butter.

- 2 bunches of radishes (about 1 pound), trimmed and halved
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons unsalted butter
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat your oven to 425°F.
- In a large bowl, toss the halved radishes with olive oil, salt, and black pepper until evenly coated.
- Spread the radishes in a single layer on a baking sheet.
- Roast the radishes in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized, stirring halfway through for even cooking.
- While the radishes are roasting, melt the butter in a small saucepan over medium heat.
- Continue cooking the butter, swirling occasionally, until it turns golden brown and has a nutty aroma, about 5-7 minutes. Be careful not to let it burn.
- Once the radishes are done, remove them from the oven and drizzle with the brown butter and lemon juice.
- Toss to combine, and sprinkle with chopped parsley if desired.
- Serve immediately as a side dish or a light appetizer.
Notes
- For added flavor, try adding a pinch of red pepper flakes to the butter for a spicy kick.
- You can also substitute the radishes with baby turnips for a different taste and texture.
