A delicious side dish featuring roasted Brussels sprouts combined with crispy pancetta and a tangy balsamic glaze.

- 2 pounds Brussels sprouts, trimmed and halved
- 4 ounces pancetta, diced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the halved Brussels sprouts, diced pancetta, olive oil, salt, and black pepper. Toss until the Brussels sprouts are well coated.
- Spread the mixture evenly on a large baking sheet in a single layer.
- Roast in the preheated oven for 20-25 minutes, or until the Brussels sprouts are golden brown and crispy, stirring halfway through for even cooking.
- While the Brussels sprouts are roasting, whisk together the balsamic vinegar, honey, and red pepper flakes (if using) in a small bowl.
- Once the Brussels sprouts are done, remove them from the oven and drizzle the balsamic mixture over them. Toss to combine.
- Return to the oven for an additional 5 minutes to allow the flavors to meld.
- Remove from the oven and garnish with chopped parsley before serving.
Notes
- For a vegetarian version, omit the pancetta and add toasted walnuts for crunch.
- Try adding a sprinkle of grated Parmesan cheese before serving for an extra layer of flavor.
