- 1 cup cooked and cooled shrimp, chopped
- 1 cup cooked and cooled vermicelli noodles, chopped
- 1 cup shredded carrots
- 1 cup shredded cabbage
- 1/4 cup fresh cilantro, chopped
- 1/4 cup green onions, sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 package (8 oz) rice paper wrappers
- Dipping sauce (soy sauce, hoisin sauce, or peanut sauce) for serving
Instructions
- In a large mixing bowl, combine the chopped shrimp, vermicelli noodles, carrots, cabbage, cilantro, green onions, soy sauce, and sesame oil. Mix well until all ingredients are evenly coated.
- Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, or until it becomes soft and pliable.
- Lay the softened rice paper on a clean, flat surface. Place about 2 tablespoons of the filling mixture in the center of the wrapper.
- Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top, making sure to seal the edges. Repeat with the remaining wrappers and filling.
- Serve the dumplings with your choice of dipping sauce.
Notes
- For a vegetarian version, substitute shrimp with tofu or mushrooms and add more vegetables like bell peppers or zucchini.
- Experiment with different herbs such as mint or basil for added flavor, or add a dash of chili sauce for a spicy kick.
