Description

Revani Cake is a delightful Mediterranean dessert made with semolina, yogurt, and a sweet syrup, perfect for any occasion.


Ingredients

  • 2 cups semolina
  • 1 cup granulated sugar
  • 1 cup plain yogurt
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup water
  • 1 cup granulated sugar (for syrup)
  • 1 tablespoon lemon juice
  • 1 tablespoon orange blossom water (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper.
  2. In a large mixing bowl, whisk together the semolina, sugar, yogurt, vegetable oil, eggs, baking powder, vanilla extract, and salt until well combined.
  3. Pour the batter into the prepared baking dish and spread it evenly. Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  4. While the cake is baking, prepare the syrup. In a saucepan, combine 1 cup of water and 1 cup of sugar. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes. Stir in the lemon juice and orange blossom water, if using. Remove from heat and let it cool.
  5. Once the cake is done baking, remove it from the oven and immediately pour the cooled syrup over the hot cake. Allow the cake to absorb the syrup for at least 30 minutes before serving.
  6. Cut the cake into squares or diamond shapes and serve.

Notes

  • For added flavor, you can sprinkle chopped nuts, such as pistachios or almonds, on top of the cake before serving.
  • To make a chocolate version, substitute 1/2 cup of semolina with cocoa powder and adjust the sugar to taste.
