  • 1/4 cup olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Add the eggplant to the skillet and cook for another 5 minutes, stirring occasionally.
  4. Stir in the bell pepper and cook for an additional 3 minutes.
  5. Add the zucchini and cook for 2 more minutes.
  6. Mix in the diced tomatoes, thyme, basil, salt, and pepper. Let the mixture simmer for about 10 minutes, allowing the flavors to meld.
  7. Transfer the vegetable mixture to a baking dish and spread it evenly.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender and slightly caramelized.
  10. Let it cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
