Description
Rasmalai is a popular Indian dessert made from soft cheese discs soaked in sweetened milk, garnished with nuts.

- 2 cups whole milk
- 1/4 cup lemon juice
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- 1/4 cup heavy cream
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped pistachios
- 1/4 cup chopped almonds
- 1/4 cup raisins
- 1/2 teaspoon saffron strands (optional)
- 1/2 cup water
Instructions
- In a saucepan, bring the whole milk to a boil over medium heat. Stir occasionally to prevent it from sticking to the bottom.
- Once boiling, reduce the heat to low and add the lemon juice gradually while stirring. The milk will curdle and separate into curds and whey.
- Remove from heat and let it sit for 5 minutes. Strain the curds using a muslin cloth or fine sieve to remove excess whey. Rinse the curds under cold water to stop the cooking process.
- Squeeze out excess water and knead the curds for about 5-7 minutes until smooth and pliable.
- Divide the kneaded dough into small balls (about 1 inch in diameter) and flatten them slightly to form discs.
- In a large pot, combine water and sugar, and bring to a boil. Gently add the discs to the boiling sugar syrup. Cook for about 10-12 minutes until they double in size.
- Remove the discs from the syrup and let them cool.
- In a separate saucepan, combine heavy cream, cardamom powder, and vanilla extract. Bring to a simmer and add saffron strands if using. Stir well.
- Place the cooled discs in a serving dish and pour the cream mixture over them.
- Garnish with chopped pistachios, almonds, and raisins. Chill in the refrigerator for at least 1 hour before serving.
Notes
- To enhance the flavor, consider adding a few drops of rose water to the cream mixture.
- For a twist, you can substitute half of the heavy cream with coconut milk for a tropical flavor.
