- 2 tablespoons unsalted butter, plus extra for greasing
- 1 cup ramps, cleaned and chopped (white and green parts separated)
- 3 tablespoons all-purpose flour
- 1 cup whole milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 3 large eggs, separated
- 1/2 cup goat cheese, crumbled
- 1/4 teaspoon cream of tartar
Instructions
- Preheat the oven to 375°F. Grease a 1.5-quart soufflé dish with butter and set aside.
- In a medium skillet, melt 2 tablespoons of butter over medium heat. Add the white parts of the ramps and sauté for about 2 minutes until softened. Add the green parts and cook for an additional minute. Remove from heat and set aside.
- In a saucepan over medium heat, melt the remaining 2 tablespoons of butter. Stir in the flour and cook for 1 minute, stirring constantly.
- Gradually whisk in the milk, salt, black pepper, and cayenne pepper. Continue to cook, whisking frequently, until the mixture thickens, about 5 minutes. Remove from heat.
- In a large bowl, whisk the egg yolks until light and frothy. Slowly add the milk mixture to the egg yolks, whisking continuously.
- Stir in the sautéed ramps and goat cheese until well combined.
- In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form.
- Gently fold the egg whites into the ramp and goat cheese mixture in three additions, being careful not to deflate the egg whites.
- Pour the soufflé mixture into the prepared dish and smooth the top.
- Bake for 25-30 minutes, or until the soufflé is puffed and golden brown. Serve immediately.
Notes
- For a richer flavor, add 1/4 cup of grated Parmesan cheese to the mixture before baking.
- If ramps are not available, substitute with green onions or leeks for a similar taste.
