- 8 cups chicken or vegetable broth
- 2 tablespoons miso paste
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- 8 ounces ramen noodles
- 1 cup sliced shiitake mushrooms
- 1 cup baby spinach
- 2 green onions, sliced
- 2 soft-boiled eggs (optional)
- 1 tablespoon chili oil (optional)
- Salt and pepper to taste
Instructions
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Stir in the miso paste and soy sauce, mixing well until the miso is dissolved.
- Pour in the chicken or vegetable broth and bring the mixture to a simmer.
- Add the sliced shiitake mushrooms and cook for about 5 minutes until they are tender.
- Meanwhile, cook the ramen noodles according to package instructions. Drain and set aside.
- Once the broth is simmering, add the baby spinach and cook for an additional 2 minutes until wilted.
- Taste the broth and season with salt and pepper as needed.
- To serve, divide the cooked ramen noodles into bowls and ladle the hot broth and vegetables over the noodles.
- If desired, top each bowl with a soft-boiled egg, sliced green onions, and a drizzle of chili oil for extra heat.

- For a vegetarian option, use vegetable broth and omit the soft-boiled eggs.
