Description

Spicy Miso Ramen is a delicious hot broth style dish that combines rich flavors and fresh ingredients for a perfect spicy meal.


Ingredients

  • 8 cups chicken or vegetable broth
  • 2 tablespoons miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 8 ounces ramen noodles
  • 1 cup sliced shiitake mushrooms
  • 1 cup baby spinach
  • 2 green onions, sliced
  • 2 soft-boiled eggs (optional)
  • 1 tablespoon chili oil (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  2. Stir in the miso paste and soy sauce, mixing well until the miso is dissolved.
  3. Pour in the chicken or vegetable broth and bring the mixture to a simmer.
  4. Add the sliced shiitake mushrooms and cook for about 5 minutes until they are tender.
  5. Meanwhile, cook the ramen noodles according to package instructions. Drain and set aside.
  6. Once the broth is simmering, add the baby spinach and cook for an additional 2 minutes until wilted.
  7. Taste the broth and season with salt and pepper as needed.
  8. To serve, divide the cooked ramen noodles into bowls and ladle the hot broth and vegetables over the noodles.
  9. If desired, top each bowl with a soft-boiled egg, sliced green onions, and a drizzle of chili oil for extra heat.

Notes

  • For a vegetarian option, use vegetable broth and omit the soft-boiled eggs.
