Ramen Carbonara is a creamy pasta dish that combines traditional carbonara flavors with ramen noodles for a unique twist.

- 8 ounces ramen noodles
- 4 ounces pancetta or bacon, diced
- 2 large eggs
- 1 cup grated Parmesan cheese
- 1 teaspoon black pepper
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley (optional)
- Salt, to taste
Instructions
- Cook the ramen noodles according to package instructions. Drain and set aside, reserving 1/2 cup of the cooking water.
- In a large skillet over medium heat, cook the pancetta or bacon until crispy, about 5-7 minutes. Add the minced garlic and sauté for an additional minute until fragrant.
- In a bowl, whisk together the eggs, grated Parmesan cheese, black pepper, and a pinch of salt until well combined.
- Remove the skillet from heat and add the cooked ramen noodles to the skillet with the pancetta and garlic. Quickly pour the egg mixture over the noodles, tossing everything together. The residual heat will cook the eggs and create a creamy sauce.
- If the mixture seems too thick, gradually add the reserved cooking water until you reach your desired consistency.
- Serve immediately, garnished with chopped parsley if desired.
Notes
- For a spicy kick, add red pepper flakes to the pancetta while cooking.
- Substitute the pancetta with sautéed mushrooms for a vegetarian version.
