Description
Qatayef Asafiri is a delicious Syrian dessert made with a unique pancake filled with a sweet ricotta and walnut mixture, perfect for any occasion.

- 1 cup all-purpose flour
- 1/2 cup semolina
- 1 1/2 cups warm water
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup ricotta cheese
- 1/2 cup chopped walnuts
- 1/4 cup powdered sugar
- 1/2 teaspoon ground cinnamon
- Oil for frying
Instructions
- In a mixing bowl, combine the flour, semolina, warm water, sugar, baking powder, salt, and vanilla extract. Whisk until the batter is smooth and well combined. Let the batter rest for 30 minutes.
- Heat a non-stick skillet over medium heat. Pour about 1/4 cup of batter onto the skillet to form a small pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Do not flip. Remove from the skillet and cover with a clean kitchen towel to keep warm. Repeat with the remaining batter.
- In a separate bowl, mix the ricotta cheese, chopped walnuts, powdered sugar, and ground cinnamon until well combined.
- Take one of the cooked pancakes and place a tablespoon of the filling in the center. Fold the pancake in half and pinch the edges to seal. Repeat with the remaining pancakes and filling.
- In a deep skillet, heat oil over medium heat. Fry the filled qatayef until golden brown on both sides, about 2-3 minutes per side. Drain on paper towels.
- Serve warm, dusted with powdered sugar.
Notes
- For a sweeter filling, add a tablespoon of honey to the ricotta mixture.
- Try using different nuts like pistachios or almonds for a unique flavor.
