Ingredients

  • 1 pound pork tenderloin
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 cups radicchio, chopped
  • 1 cup Gorgonzola cheese, crumbled
  • 1 cup walnuts, roughly chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F.
  2. Pat the pork tenderloin dry with paper towels and season it generously with salt, pepper, garlic powder, and onion powder.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork tenderloin and sear on all sides until browned, about 3-4 minutes per side.
  4. Transfer the skillet to the preheated oven and roast the pork for 20-25 minutes, or until it reaches an internal temperature of 145°F.
  5. While the pork is roasting, prepare the radicchio. In a large bowl, combine the chopped radicchio, Gorgonzola cheese, walnuts, balsamic vinegar, and honey. Toss to combine and set aside.
  6. Once the pork is done, remove it from the oven and let it rest for 5-10 minutes before slicing.
  7. To serve, place a generous portion of the radicchio mixture on a plate, top with slices of the pork tenderloin, and garnish with fresh parsley.
