- 1 pound pork tenderloin
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 cups radicchio, chopped
- 1 cup Gorgonzola cheese, crumbled
- 1 cup walnuts, roughly chopped
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F.
- Pat the pork tenderloin dry with paper towels and season it generously with salt, pepper, garlic powder, and onion powder.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork tenderloin and sear on all sides until browned, about 3-4 minutes per side.
- Transfer the skillet to the preheated oven and roast the pork for 20-25 minutes, or until it reaches an internal temperature of 145°F.
- While the pork is roasting, prepare the radicchio. In a large bowl, combine the chopped radicchio, Gorgonzola cheese, walnuts, balsamic vinegar, and honey. Toss to combine and set aside.
- Once the pork is done, remove it from the oven and let it rest for 5-10 minutes before slicing.
- To serve, place a generous portion of the radicchio mixture on a plate, top with slices of the pork tenderloin, and garnish with fresh parsley.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the radicchio mixture.
- Substitute the Gorgonzola cheese with feta or goat cheese for a different flavor profile.
