Delicious pork ribs coated in chipotle butter, served with crispy shallots and avocado smash.

- 2 pounds pork ribs
- 1 tablespoon smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup chicken broth
- 1 stick (4 ounces) unsalted butter, softened
- 2 tablespoons adobo sauce (from canned chipotle peppers)
- 2 ripe avocados
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shallots, thinly sliced
- 1/2 cup vegetable oil (for frying)
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat your oven to 300°F (150°C). In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture all over the pork ribs.
- Place the ribs in a baking dish and pour the chicken broth around them. Cover the dish tightly with aluminum foil and bake for 2.5 to 3 hours, or until the ribs are tender.
- While the ribs are baking, prepare the chipotle butter. In a bowl, mix the softened butter with the adobo sauce until well combined. Set aside.
- For the crispy shallots, heat the vegetable oil in a small saucepan over medium heat. Once hot, add the sliced shallots and fry until golden brown, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels.
- In a separate bowl, mash the avocados with lime juice, salt, and black pepper until smooth but still slightly chunky.
- Once the ribs are done baking, remove them from the oven and brush the chipotle butter generously over the ribs. Increase the oven temperature to 400°F (200°C) and return the ribs to the oven for an additional 15-20 minutes, until the butter is bubbly and slightly caramelized.
- To serve, place a generous scoop of avocado smash on each plate, top with the crispy shallots, and serve the ribs alongside. Garnish with fresh cilantro if desired.
Notes
- For a spicier kick, add more adobo sauce to the chipotle butter or include some chopped chipotle peppers.
- Substitute the pork ribs with chicken thighs for a lighter option, adjusting the cooking time as needed.
