- 2 pounds pork cheeks, trimmed
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup beef broth
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 1/4 cup red wine vinegar
- 1/2 teaspoon red pepper flakes
- 1/2 cup olive oil
- 4 large eggs
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- Vegetable oil for frying
Instructions
- Season the pork cheeks with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Add the pork cheeks and sear until browned on all sides, about 5-7 minutes.
- Pour in the beef broth and apple cider vinegar. Add smoked paprika, garlic powder, and onion powder. Bring to a simmer, cover, and reduce heat to low. Cook for 2-3 hours until the pork is tender and easily shredded.
- While the pork is cooking, prepare the chimichurri. In a bowl, combine parsley, cilantro, red wine vinegar, red pepper flakes, and olive oil. Mix well and set aside.
- Once the pork is cooked, shred it using two forks and mix it with the cooking liquid. Keep warm.
- In a shallow dish, set up a breading station with flour, beaten eggs, and panko breadcrumbs. Dip each egg in flour, then in the beaten eggs, and finally coat with panko.
- In a large skillet, heat vegetable oil over medium heat. Fry the breaded eggs until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
- To serve, place a generous portion of the shredded pork on a plate, top with crispy eggs, and drizzle with chimichurri sauce.
Notes
- For a spicy kick, add more red pepper flakes to the chimichurri or serve with hot sauce.
- You can substitute chicken thighs for pork cheeks if preferred.
