  • 2 large pineapple buns (store-bought or homemade)
  • 1 pint vanilla ice cream (or your favorite flavor)
  • 1/4 cup sweetened shredded coconut (optional)
  • 1/4 cup crushed pineapple (drained, optional)
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F.
  2. If using store-bought pineapple buns, place them on a baking sheet. If making homemade buns, prepare the dough and shape it into buns.
  3. In a small bowl, mix the softened butter, sugar, and cinnamon together until well combined.
  4. Spread this mixture on the top of each pineapple bun.
  5. Bake the buns in the preheated oven for 10-12 minutes, or until they are golden brown and the tops are slightly crispy.
  6. Remove from the oven and let them cool for a few minutes.
  7. While the buns are cooling, scoop the vanilla ice cream into a bowl and let it soften for about 5 minutes.
  8. If desired, mix in the crushed pineapple and shredded coconut for added flavor.
  9. Once the buns are cool enough to handle, slice each bun in half horizontally.
  10. Generously fill the bottom half of each bun with the ice cream mixture, then place the top half back on.
