Savor cheesy potato delights with this traditional Polish pierogi recipe.

- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup sour cream
- 1/4 cup unsalted butter, softened
- 1 cup mashed potatoes (about 2 medium potatoes)
- 1 cup shredded sharp cheddar cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 cup chopped green onions (optional)
- Butter or oil for frying
Instructions
- In a large bowl, mix the flour and salt together. Create a well in the center and add the egg, sour cream, and softened butter. Mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- While the dough is resting, prepare the filling. In a bowl, combine the mashed potatoes, cheddar cheese, garlic powder, black pepper, and green onions (if using). Mix until well combined.
- Roll out the dough on a floured surface to about 1/8 inch thick. Use a round cutter (about 3 inches in diameter) to cut out circles.
- Place about 1 tablespoon of the potato filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal tightly.
- Bring a large pot of salted water to a boil. Carefully drop the pierogi into the boiling water in batches. Cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon and set aside.
- In a skillet, heat butter or oil over medium heat. Add the cooked pierogi and fry until golden brown and crispy, about 2-3 minutes per side.
- Serve warm, topped with additional sour cream or sautéed onions if desired.
Notes
- For a different filling, try using sautéed mushrooms or sauerkraut instead of potatoes and cheese.
- To freeze pierogi, place uncooked pierogi on a baking sheet in a single layer until frozen, then transfer to a freezer bag. Cook from frozen, adding a few extra minutes to the boiling time.
