Description
A comforting Vietnamese soup made with beef bones, brisket, and aromatic spices.

- 1 pound beef bones (preferably marrow bones)
- 1 pound beef brisket
- 1 onion, halved
- 1 piece of ginger (about 3 inches), halved lengthwise
- 4 cloves of garlic, smashed
- 5 star anise
- 1 cinnamon stick
- 1 tablespoon coriander seeds
- 1 tablespoon fish sauce
- 8 cups water
- 1 package (14 ounces) rice noodles (bánh phở)
- Fresh herbs (basil, cilantro, mint)
- 2 green onions, sliced
- 1 lime, cut into wedges
- Bean sprouts
- Sriracha sauce (optional)
- Hoisin sauce (optional)
Instructions
- In a large pot, add the beef bones and cover them with water. Bring to a boil and let it boil for 10 minutes. Drain and rinse the bones to remove impurities.
- In the same pot, add the cleaned bones, brisket, onion, ginger, garlic, star anise, cinnamon stick, coriander seeds, fish sauce, and 8 cups of fresh water. Bring to a boil, then reduce the heat to low and simmer for about 3 hours. Skim off any foam that rises to the surface.
- After 3 hours, remove the brisket and set it aside to cool. Continue simmering the broth for another hour.
- Once the brisket is cool, slice it thinly against the grain. Strain the broth through a fine-mesh sieve to remove solids and return the clear broth to the pot. Season with salt to taste.
- Prepare the rice noodles according to package instructions. Drain and set aside.
- To serve, place a portion of noodles in a bowl, top with sliced brisket, and ladle hot broth over the top. Garnish with fresh herbs, green onions, lime wedges, and bean sprouts. Add Sriracha or hoisin sauce if desired.
Notes
- For a richer broth, roast the bones and onion in the oven at 400°F for 30 minutes before adding them to the pot.
- You can substitute chicken for beef by using chicken bones and thighs, adjusting the cooking time to about 1.5 hours for the broth.
