- 2 cups basmati rice
- 1 pound chicken, cut into bite-sized pieces
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 cup plain yogurt
- 1/4 cup cooking oil or ghee
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, chopped
- 2 teaspoons biryani spice mix (or garam masala)
- 1 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 4 cups water
- 2 whole cloves
- 2 cardamom pods
- 1 cinnamon stick
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a large pot, heat the oil or ghee over medium heat. Add the cumin seeds, cloves, cardamom pods, and cinnamon stick. Sauté for about 1 minute until fragrant.
- Add the sliced onions to the pot and cook until golden brown, about 8-10 minutes.
- Stir in the minced garlic and ginger, cooking for another 1-2 minutes until aromatic.
- Add the chicken pieces to the pot and cook until they are no longer pink, about 5-7 minutes.
- Mix in the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook for another 5 minutes until the tomatoes soften.
- Stir in the yogurt, biryani spice mix, cilantro, and mint. Cook for an additional 2 minutes.
- Add the drained rice to the pot, followed by 4 cups of water. Bring to a boil, then reduce the heat to low. Cover the pot and simmer for 20 minutes, or until the rice is cooked and the water is absorbed.
- Once cooked, remove from heat and let it sit covered for an additional 10 minutes. Fluff the biryani with a fork before serving.
Notes
- For extra flavor, try adding a few saffron strands soaked in warm milk to the rice before cooking.
- You can also substitute chicken with lamb or vegetables for a different twist.
- For a richer taste, consider garnishing with fried onions or serving with a side of raita (yogurt sauce).
