- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup erythritol or preferred keto sweetener
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup unsweetened almond butter
- 1/4 cup sugar-free chocolate chips
- 1 teaspoon peppermint extract
- 1 tablespoon coconut oil, melted
- 1/4 cup cream cheese, softened
Instructions
- In a mixing bowl, combine almond flour, cocoa powder, erythritol, salt, and baking powder. Mix well until all dry ingredients are evenly distributed.
- Add almond butter, melted coconut oil, cream cheese, and peppermint extract to the dry ingredients. Stir until a dough forms. If the dough is too crumbly, add a teaspoon of water at a time until it holds together.
- Fold in the sugar-free chocolate chips until evenly distributed throughout the dough.
- Using your hands, roll the dough into small balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
- Once all the dough is rolled, place the baking sheet in the refrigerator for at least 30 minutes to firm up.
- After chilling, enjoy the bites straight from the fridge or let them sit at room temperature for a few minutes before serving.
Notes
- For a festive touch, consider rolling the bites in crushed sugar-free peppermint candies before chilling.
