Description

A simple and delicious recipe for Peppercorn Chicken Steam Bowl, perfect for a healthy meal.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 tablespoon black peppercorns, crushed
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers (any color)
  • 1 cup snap peas
  • 1 cup cooked brown rice
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 green onion, sliced (for garnish)

Instructions

  1. Start by seasoning the chicken breasts with crushed black peppercorns and salt. Let them sit for about 10 minutes to absorb the flavors.
  2. In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  3. In the same skillet, add the broccoli, bell peppers, and snap peas. Stir-fry the vegetables for about 4-5 minutes until they are tender-crisp.
  4. While the vegetables are cooking, slice the rested chicken into bite-sized pieces.
  5. In a small bowl, mix together the cooked brown rice, soy sauce, sesame oil, garlic powder, and ginger powder.
  6. To assemble the steam bowl, place a scoop of the rice mixture at the bottom of each bowl. Top with the sliced chicken and then add the stir-fried vegetables.
  7. Garnish with sliced green onions before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the vegetables while stir-frying.
  • Substitute the chicken with tofu or shrimp for a different protein option, adjusting cooking times as necessary.
