Description

Crispy Meringue Pavlova topped with fresh berries, a delightful dessert from Australia/New Zealand.


Ingredients

  • 4 large egg whites, at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • Mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper. Draw a 9-inch circle on the parchment as a guide for the meringue.
  2. In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.
  3. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat on high speed until the mixture is glossy and stiff peaks form. This should take about 5-7 minutes.
  4. Gently fold in the vinegar, cornstarch, and vanilla extract using a spatula until just combined.
  5. Spoon the meringue mixture onto the prepared parchment paper, using the circle as a guide. Create a slight well in the center to hold the toppings later.
  6. Bake in the preheated oven for 1 hour, then turn off the oven and let the pavlova cool completely inside the oven with the door slightly ajar. This helps prevent cracking.
  7. Once cooled, whip the heavy cream with the powdered sugar until soft peaks form.
  8. Carefully transfer the pavlova to a serving platter. Spread the whipped cream over the top and arrange the mixed berries on top.
  9. Garnish with mint leaves if desired and serve immediately.

Notes

  • For a chocolate twist, add 2 tablespoons of cocoa powder to the meringue mixture.
  • To make it seasonal, use whatever fresh fruits are available, such as peaches or kiwi, for a different flavor profile.
