  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour

  • 1 teaspoon vanilla extract
  • 3 large egg yolks
  • 1 package (17.3 ounces) frozen puff pastry, thawed
  • Ground cinnamon, for sprinkling (optional)
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat your oven to 400°F.
  2. In a medium saucepan, combine the milk, heavy cream, sugar, flour, and salt. Whisk until smooth and heat over medium heat, stirring constantly until the mixture thickens and just begins to simmer. Remove from heat and stir in the vanilla extract.
  3. In a separate bowl, whisk the egg yolks until smooth. Gradually add a small amount of the hot milk mixture to the yolks, whisking constantly to temper them. Slowly pour the yolk mixture back into the saucepan, whisking continuously until well combined. Return to low heat and cook for another minute, stirring constantly. Remove from heat and let cool slightly.
  4. Roll out the thawed puff pastry on a lightly floured surface to smooth out any creases. Cut the pastry into circles about 4 inches in diameter. Press the circles into the cups of a muffin tin, making sure to cover the sides and bottom.
  5. Fill each pastry shell with the custard mixture, about 3/4 full. Bake in the preheated oven for 15-20 minutes or until the tops are golden brown and slightly caramelized.
  6. Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature, sprinkled with ground cinnamon and powdered sugar if desired.
