A refreshing and spicy Thai salad made with green papaya and a mix of vibrant vegetables.
Ingredients

- 2 cups green papaya, shredded
- 1 cup carrots, shredded
- 1/2 cup cherry tomatoes, halved
- 1/4 cup green beans, cut into 1-inch pieces
- 1/4 cup roasted peanuts, chopped
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- 1–2 Thai bird chilies, minced (adjust to taste)
- 1 clove garlic, minced
Instructions
- In a large bowl, combine the shredded green papaya, shredded carrots, halved cherry tomatoes, and cut green beans. Toss gently to mix the vegetables.
- In a separate small bowl, whisk together the fish sauce, lime juice, sugar, minced chilies, and minced garlic until the sugar is dissolved.
- Pour the dressing over the salad mixture and toss everything together until well coated.
- Let the salad sit for about 10 minutes to allow the flavors to meld.
- Before serving, sprinkle the chopped roasted peanuts on top for added crunch.
Notes
- For a sweeter version, add a few slices of mango or pineapple.
- If you prefer a vegetarian option, substitute fish sauce with soy sauce or a vegan fish sauce alternative.
