Description
Pani Puri is a popular Indian street food known for its crispy puris filled with a spicy and tangy water, along with a delicious filling of potatoes and chickpeas.
Ingredients

- 2 cups semolina (sooji)
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Water (as needed for dough)
- Oil (for frying)
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1–2 green chilies (adjust to taste)
- 1 teaspoon roasted cumin powder
- 1 teaspoon chaat masala
- 1 tablespoon tamarind paste
- 1 tablespoon lemon juice
- Salt (to taste)
- 4 cups cold water
- 1 cup boiled and mashed potatoes
- 1/2 cup boiled chickpeas
- 1/2 teaspoon cumin powder
- 1/2 teaspoon red chili powder
- Salt (to taste)
Instructions
- In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt.
- Gradually add water and knead into a smooth dough.
- Cover with a damp cloth and let it rest for 30 minutes.
- After resting, divide the dough into small balls.
- Roll each ball into thin circles (about 2 inches in diameter).
- Heat oil in a deep pan over medium heat.
- Fry the circles until they puff up and turn golden brown.
- Remove and drain on paper towels.
- For the pani, blend mint leaves, cilantro leaves, green chilies, roasted cumin powder, chaat masala, tamarind paste, lemon juice, and salt in a blender.
- Add cold water and blend until smooth. Adjust seasoning to taste.
- In a bowl, mix boiled potatoes, boiled chickpeas, cumin powder, red chili powder, and salt to prepare the filling.
- To serve, make a small hole in the top of each puri, fill with the potato-chickpea mixture, and dip into the chilled pani.
- Enjoy immediately!
Notes
- For a spicier pani, add more green chilies or a dash of hot sauce.
- You can substitute the filling with a mix of sprouts or diced vegetables for a healthier option.
