  • For the Coconut Cream Topping:
  • 1 cup coconut cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the coconut milk, vegetable oil, eggs, pandan extract, and food coloring if using. Mix until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined and smooth.
  5. Divide the batter evenly among the prepared cake pans.
  6. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
