Description

A delicious and creamy Indian dish made with spinach and paneer cheese.


Ingredients

  • 2 cups fresh spinach leaves, washed and chopped
  • 8 ounces paneer cheese, cubed
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 green chili, chopped (adjust for spice preference)
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chili powder (optional)
  • 1 tablespoon vegetable oil
  • ½ cup heavy cream (optional for richness)
  • Salt to taste
  • Water as needed

Instructions

  1. In a large pot, bring water to a boil. Add the chopped spinach and blanch for 2-3 minutes until wilted. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and blend the spinach into a smooth puree. Set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds.
  3. Add the chopped onion to the skillet and sauté until golden brown, about 5-7 minutes. Stir in the minced garlic, grated ginger, and chopped green chili. Cook for another 1-2 minutes until fragrant.
  4. Add the turmeric powder, red chili powder (if using), and salt. Stir well to combine.
  5. Pour in the spinach puree and mix thoroughly. Cook for about 5 minutes, allowing the flavors to meld. If the mixture is too thick, add a little water to reach your desired consistency.
  6. Gently fold in the cubed paneer and cook for another 5 minutes, allowing the paneer to warm through.
  7. Stir in the garam masala and heavy cream (if using) for added richness. Cook for an additional 2 minutes, then remove from heat.
  8. Serve hot with naan, roti, or rice.

Notes

  • For a vegan version, substitute paneer with tofu and use coconut cream instead of heavy cream.
  • Add a squeeze of lemon juice before serving to brighten the flavors.
