Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 ½ cups Arborio rice
  • 1 teaspoon smoked paprika
  • ½ teaspoon saffron threads
  • 4 cups chicken broth
  • 1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1 pound shrimp, peeled and deveined
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Lemon wedges, for serving
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large paella pan or wide skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes until fragrant.
  3. Add the green beans and cook for another 3 minutes, stirring occasionally.
  4. Stir in the Arborio rice, smoked paprika, and saffron threads, coating the rice with the oil and vegetables for about 2 minutes.
  5. Pour in the chicken broth and bring to a simmer. Add the chicken pieces, season with salt and pepper, and reduce the heat to low.
  6. Cover the pan and let it cook for 15 minutes without stirring.
  7. After 15 minutes, add the shrimp and frozen peas on top of the rice. Cover again and cook for an additional 5-7 minutes, or until the shrimp are pink and the rice is tender.
  8. Remove from heat and let the paella sit, covered, for 5 minutes before serving.
  9. Serve with lemon wedges and garnish with fresh parsley.

  • For a vegetarian version, substitute the chicken and shrimp with additional vegetables like zucchini and artichokes.
