Description

Ingredients

  • 8 ounces rice noodles
  • 2 tablespoons vegetable oil
  • 1/2 cup firm tofu, cubed
  • 2 large eggs, lightly beaten
  • 2 cloves garlic, minced
  • 1 cup bean sprouts
  • 1/4 cup green onions, chopped
  • 1/4 cup roasted peanuts, chopped
  • 1 lime, cut into wedges
  • 3 tablespoons fish sauce (or soy sauce for a vegetarian option)
  • 1 tablespoon tamarind paste
  • 1 tablespoon sugar
  • 1 teaspoon chili powder (adjust to taste)

Instructions

  1. Cook the rice noodles according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the cubed tofu and cook until golden brown, about 5 minutes. Remove tofu and set aside.
  3. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
  4. Push the garlic to one side of the skillet and pour in the beaten eggs. Scramble until just set, then mix with the garlic.
  5. Add the cooked noodles, tofu, and sauce ingredients to the skillet. Toss everything together and cook for an additional 2-3 minutes until heated through.
  6. Stir in the bean sprouts and green onions, cooking for another minute.
  7. Serve hot, garnished with chopped peanuts and lime wedges on the side.

Notes

  • For added protein, consider adding shrimp or chicken along with the tofu.
