- 1 dozen fresh oysters, shucked
- 4 tablespoons unsalted butter
- 1 cup fresh spinach, chopped
- 1/4 cup green onions, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup heavy cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon hot sauce (optional)
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, melt the butter over medium heat. Add the chopped spinach, green onions, and minced garlic. Sauté for about 3-4 minutes, until the spinach is wilted and the onions are soft.
- In a mixing bowl, combine the sautéed mixture with breadcrumbs, Parmesan cheese, heavy cream, Worcestershire sauce, and hot sauce (if using). Season with salt and pepper to taste. Mix well until combined.
- Place the shucked oysters on a baking sheet. Spoon the spinach mixture generously over each oyster.
- Bake in the preheated oven for 10-12 minutes, or until the topping is golden brown and the oysters are cooked through.
- Remove from the oven and let cool for a minute. Serve warm with lemon wedges on the side.
Notes
- For a richer flavor, add crumbled bacon or pancetta to the spinach mixture before baking.
- Substitute the spinach with kale or Swiss chard for a different green, or mix in some artichoke hearts for added texture.
