Indulge in this exquisite Opera cake recipe, a delightful dessert that combines layers of almond sponge, coffee syrup, and rich chocolate ganache.


Ingredients

  • 1 cup almond flour
  • 1 cup powdered sugar
  • 4 large eggs
  • 1/4 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 1/2 cup dark chocolate, chopped
  • 1/4 cup brewed coffee, cooled
  • 1/4 cup coffee liqueur (optional)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sugar (for syrup)
  • 1/4 cup water (for syrup)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a mixing bowl, combine almond flour and powdered sugar. Add eggs and granulated sugar, whisking until well combined.
  3. Sift together the all-purpose flour and cocoa powder, then gently fold into the almond mixture.
  4. Slowly add the melted butter, mixing until smooth. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely in the pan.
  6. In a small saucepan, combine the sugar and water to make the syrup. Bring to a boil, then reduce heat and simmer for 5 minutes. Remove from heat and stir in the coffee and coffee liqueur (if using). Let cool.
  7. For the ganache, heat the heavy cream in a saucepan until just boiling. Pour over the chopped chocolate in a bowl and let sit for 5 minutes. Stir until smooth and glossy.
  8. Once the cake is cooled, slice it into three equal layers. Place one layer on a serving platter and brush with the coffee syrup.
  9. Spread a layer of ganache over the first cake layer, then repeat with the second layer. Top with the final layer of cake and cover the entire cake with the remaining ganache.
  10. Chill in the refrigerator for at least 2 hours before slicing to allow the flavors to meld.

Notes

  • For a nut-free version, substitute almond flour with an equal amount of all-purpose flour.
