  • 4 cups low-sodium chicken broth
  • 12 ounces fettuccine noodles
  • 1 cup heavy whipping cream
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs
  • 1/4 cup fresh parsley, chopped (for topping)

Instructions

  1. Begin by heating the olive oil in a large pot over medium heat. Add the diced chicken along with the salt and pepper, cooking until the chicken is golden brown and fully cooked, which should take about 5-7 minutes. Once done, remove the chicken and set it aside on a plate.
  2. In the same pot, toss in the chopped garlic and sauté for about 30 seconds until it releases a fragrant aroma.
  3. Next, pour in the chicken broth and bring it to a rolling boil. Add the fettuccine noodles and cook them according to the package directions, stirring occasionally, until they reach an al dente texture, which should take around 10-12 minutes.
  4. Lower the heat and gently stir in the heavy whipping cream, followed by the grated Parmesan cheese and dried Italian herbs. Stir until the cheese has melted and the sauce becomes rich and creamy.
  5. Add the cooked chicken back into the pot, stirring to combine everything well. Allow it to heat through for an additional 2-3 minutes.
  6. Serve the dish hot, garnished with a sprinkle of fresh parsley on top.
