Description

Nasi goreng (Indonesia) is a spicy delight made with fried rice, vegetables, and protein.


Ingredients

  • 2 cups cooked jasmine rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 cup cooked chicken, shredded (or tofu for a vegetarian option)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 teaspoon sambal oelek (or to taste)
  • 1/2 cup frozen peas
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and diced onion, sautéing until fragrant and the onion is translucent, about 2-3 minutes.
  2. Add the diced red bell pepper and cooked chicken (or tofu) to the skillet. Stir-fry for another 2-3 minutes until the bell pepper is tender.
  3. Push the mixture to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix them into the rice mixture.
  4. Add the cooked rice to the skillet, breaking up any clumps. Pour in the soy sauce, sweet soy sauce, and sambal oelek. Stir well to combine all ingredients and heat through, about 3-4 minutes.
  5. Stir in the frozen peas and sliced green onions. Cook for an additional 2 minutes until the peas are heated through. Season with salt and pepper to taste.
  6. Serve hot, garnished with additional green onions if desired.

Notes

  • For added flavor, consider adding shrimp or other vegetables like carrots or broccoli.
  • If you prefer a milder dish, reduce the amount of sambal oelek or omit it altogether.
