- 1/2 cup unsweetened shredded coconut

- 1 large egg

- 1/2 cup unsalted butter, softened (for middle layer)
- 2 cups powdered sugar (for middle layer)
- 2 tablespoons vanilla custard powder (or instant vanilla pudding mix, for middle layer)
- 2 tablespoons milk (for middle layer)
- 4 ounces semi-sweet chocolate, chopped (for top layer)
- 2 tablespoons unsalted butter (for top layer)
Instructions
- In a medium bowl, combine graham cracker crumbs, cocoa powder, powdered sugar, shredded coconut, softened butter, egg, and vanilla extract. Mix until well combined.
- Press the mixture firmly into the bottom of a greased 8-inch square baking pan.
- In another bowl, beat together the softened butter, powdered sugar, custard powder, and milk until smooth and creamy.
- Spread this mixture evenly over the graham cracker layer in the pan.
- For the top layer, melt the chopped chocolate and butter together in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Pour the melted chocolate over the custard layer and spread evenly.
- Refrigerate the bars for at least 2 hours or until set.
- Once set, cut into squares and serve.

- For a gluten-free version, use gluten-free graham crackers.
- You can also add chopped nuts or dried fruit to the base layer for added texture and flavor.
