Description
Musakhan is a traditional Middle Eastern dish featuring roasted chicken with sumac and onions, served on flatbreads.

- 3 pounds bone-in, skin-on chicken pieces (legs and thighs work well)
- 3 large onions, thinly sliced
- 1/2 cup olive oil
- 2 teaspoons ground sumac
- 1 teaspoon ground cumin
- 1 teaspoon ground allspice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large flatbreads or pita breads
- 1/4 cup pine nuts, toasted
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the olive oil, ground sumac, cumin, allspice, salt, and black pepper. Add the chicken pieces and toss until they are well coated with the spice mixture.
- In a large oven-safe skillet or roasting pan, spread the sliced onions evenly across the bottom. Place the marinated chicken pieces on top of the onions.
- Roast in the preheated oven for 40-50 minutes, or until the chicken is cooked through and the skin is golden brown. The internal temperature should reach 165°F (75°C).
- While the chicken is roasting, toast the pine nuts in a dry skillet over medium heat until golden brown, about 3-5 minutes. Stir frequently to prevent burning.
- Once the chicken is done, remove it from the oven and let it rest for 5-10 minutes.
- Serve the chicken on top of the flatbreads, spooning the roasted onions and pan juices over the top. Garnish with toasted pine nuts and chopped parsley. Serve with lemon wedges on the side.
Notes
- For a spicier version, add a pinch of cayenne pepper to the spice mixture.
- You can also substitute the chicken with roasted vegetables for a vegetarian option, using the same spices and cooking method.
