Description

A flavorful Moroccan Chicken Tagine that combines tender chicken thighs with aromatic spices, dried fruits, and olives, served over couscous or rice.


Ingredients

  • 2 pounds bone-in, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 cup chicken broth
  • 1/2 cup dried apricots, chopped
  • 1/2 cup pitted green olives, sliced
  • 1/4 cup honey
  • Salt and pepper to taste
  • Fresh cilantro or parsley, for garnish
  • Cooked couscous or rice, for serving

Instructions

  1. Heat olive oil in a large Dutch oven or tagine over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the chicken thighs to the pot, browning them on all sides for about 5-7 minutes.
  4. Sprinkle the cumin, coriander, cinnamon, ginger, cayenne, salt, and pepper over the chicken, stirring to coat evenly.
  5. Pour in the drained diced tomatoes and chicken broth. Bring to a simmer.
  6. Add the chopped apricots and honey, stirring to combine.
  7. Cover the pot and reduce the heat to low. Let it simmer for about 45 minutes, or until the chicken is tender and cooked through.
  8. Stir in the sliced olives and cook for an additional 5 minutes.
  9. Taste and adjust seasoning if necessary.
  10. Serve hot over cooked couscous or rice, garnished with fresh cilantro or parsley.
