Description

Molokhia is a flavorful dish made with fresh or dried molokhia leaves, cooked in a savory broth with spices.


Ingredients

  • 2 cups fresh molokhia leaves (or 1 cup dried molokhia)
  • 4 cups chicken or vegetable broth
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 lemon, cut into wedges (for serving)
  • Cooked rice or bread (for serving)

Instructions

  1. If using fresh molokhia, rinse the leaves thoroughly and remove the stems. If using dried molokhia, soak it in warm water for 30 minutes, then drain.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, ground coriander, and ground cumin. Cook for an additional 1-2 minutes until fragrant.
  4. Pour in the chicken or vegetable broth and bring to a gentle simmer.
  5. Add the molokhia leaves to the pot. If using fresh leaves, cook for about 10-15 minutes until tender. If using dried leaves, cook for about 20-25 minutes.
  6. Season with salt and pepper to taste. Remove from heat and let it sit for a few minutes before serving.
  7. Serve hot over cooked rice or with bread, and garnish with lemon wedges.

Notes

  • For added flavor, consider adding cooked chicken or shrimp to the pot during the last few minutes of cooking.
