Molokhia is a flavorful dish made with fresh or dried molokhia leaves, cooked in a savory broth with spices.
Ingredients

- 2 cups fresh molokhia leaves (or 1 cup dried molokhia)
- 4 cups chicken or vegetable broth
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 lemon, cut into wedges (for serving)
- Cooked rice or bread (for serving)
Instructions
- If using fresh molokhia, rinse the leaves thoroughly and remove the stems. If using dried molokhia, soak it in warm water for 30 minutes, then drain.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, ground coriander, and ground cumin. Cook for an additional 1-2 minutes until fragrant.
- Pour in the chicken or vegetable broth and bring to a gentle simmer.
- Add the molokhia leaves to the pot. If using fresh leaves, cook for about 10-15 minutes until tender. If using dried leaves, cook for about 20-25 minutes.
- Season with salt and pepper to taste. Remove from heat and let it sit for a few minutes before serving.
- Serve hot over cooked rice or with bread, and garnish with lemon wedges.
Notes
- For added flavor, consider adding cooked chicken or shrimp to the pot during the last few minutes of cooking.
- If you prefer a thicker consistency, blend a portion of the molokhia before serving to create a creamier texture.
