A delicious and healthy Miso Cod Sesame Bok Choy Crispy Nori Bowl that combines tender cod fillets with sautéed bok choy, crispy nori, and a flavorful miso glaze.

- 4 (6-ounce) cod fillets
- 1/4 cup white miso paste
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 cups bok choy, chopped
- 1 tablespoon vegetable oil
- 1 teaspoon sesame seeds
- 4 sheets nori, cut into strips
- 2 cups cooked rice (white or brown)
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a small bowl, whisk together the miso paste, honey, soy sauce, rice vinegar, and sesame oil until smooth.
- Place the cod fillets on the prepared baking sheet and brush the miso mixture generously over the top of each fillet. Bake for 12-15 minutes, or until the fish flakes easily with a fork.
- While the cod is baking, heat the vegetable oil in a large skillet over medium heat. Add the chopped bok choy and sauté for about 3-4 minutes, until tender. Season with salt and pepper to taste.
- In a separate small skillet, toast the nori strips over medium heat for about 1-2 minutes, until crispy. Keep an eye on them to prevent burning.
- To assemble the bowls, divide the cooked rice among four bowls. Top each bowl with a portion of the sautéed bok choy, a cod fillet, and a sprinkle of sesame seeds. Add the crispy nori strips and garnish with sliced green onions.
Notes
- For a spicier kick, add a teaspoon of sriracha or chili paste to the miso glaze.
- Substitute the cod with salmon or tofu for a different flavor profile or to accommodate dietary preferences.
