Mini Keto Chocolate Chip Cheesecakes are a must-try for anyone looking for a delicious low-carb dessert.


Ingredients

  • 1 cup almond flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup granulated erythritol
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated erythritol
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup sugar-free chocolate chips

Instructions

  1. Preheat your oven to 325°F. Line a muffin tin with paper liners or grease it with cooking spray.
  2. In a medium bowl, combine almond flour, cocoa powder, erythritol, and salt. Stir in the melted butter until the mixture resembles wet sand.
  3. Evenly distribute the crust mixture into the bottom of each muffin cup, pressing it down firmly. Bake for 10 minutes, then remove from the oven and let cool slightly.
  4. In a large mixing bowl, beat the softened cream cheese until smooth. Add the erythritol and vanilla extract, mixing until well combined.
  5. Add the eggs one at a time, mixing on low speed until just incorporated. Be careful not to overmix. Gently fold in the sugar-free chocolate chips.
  6. Pour the cheesecake batter over the cooled crusts, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes, or until the edges are set but the center is slightly jiggly. Turn off the oven and leave the cheesecakes inside for an additional 10 minutes.
  8. Remove from the oven and let cool to room temperature. Refrigerate for at least 2 hours before serving to allow them to set.

Notes
